Contrary to popular belief, venison is not just a winter delicacy; we source this exquisite meat throughout the year from the picturesque Cotswolds. Our venison is derived from Fallow Deer, chosen for its lighter, milder, and more delicate flavour profile.
Our culinary process begins with the whole saddle of venison, which is skilfully butchered into two loins and two fillets by our team of Chefs on-site at The Mount Pub.
