Our Orkney scallops are harvested through sustainable fishing practices, with divers hand-picking each scallop to ensure only the right sizes are chosen, minimising environmental impact. This method not only preserves the delicate marine ecosystem but also guarantees that the scallops remain undamaged during extraction.
From Sea to Table in Record Time
To maintain the utmost freshness, the scallops are delivered to us in the shortest possible time from sea to land. Arriving live, fresh, in their shells and often within a day of being harvested – we ensure that the quality and taste are preserved.
Meticulous Preparation for Unparalleled Flavor
Our preparation process is a labour of love. We meticulously clean the shells and carefully shuck the scallops, breaking them down into three parts: the scallop, the skirt, and the roe. This attention to detail allows us to present a dish that highlights the unique textures and flavours of each component.
The scallops are then pan-roasted to perfection and paired with a seasonal sweetcorn purée, which is locally sourced and in peak season. The sweetcorn is toasted and transformed into a creamy purée, providing a delightful contrast to the tender scallops. An oyster leaf garnish adds a fresh note to the dish.
Complemented by a Freshly Made Crab Bisque
Our Orkney scallops are also served with a rich crab bisque, freshly made from sustainably and responsibly fished crabs. This luxurious bisque enhances the overall dish, adding depth and richness to the plate.
