The Mount Pub is excited to introduce a new addition to our summer menu: a fresh and vibrant tomato salad that celebrates the best of the season. With tomatoes at their peak ripeness, this dish highlights simplicity and flavour, making it perfect for summer dining.
In-season tomatoes are packed with natural sweetness and juiciness, needing minimal preparation. Tomatoes are full of flavour and don’t require any manipulation. Just some seasoning and they are ready to eat and taste amazing!
Our tomatoes come from the Isle of Wight and Westlands in Evesham, known for their exceptional quality. We use a variety of tomatoes from both sources to create a rich flavour profile.
Chunky pieces of fresh tomatoes are tossed with vinaigrette, chopped basil, Maldon sea salt, black pepper, and pickled shallots. Topped with Pangrattato (breadcrumbs cooked in olive oil and garlic, seasoned with Parmesan) this salad is a delightful blend of textures and flavours – a healthy and delicious dish.
“Tomatoes are one of my favourite ingredients, and they remind me of eating tomatoes with salt on the beach in Malta with my grandparents,” shares our Head Chef Phil, adding a nostalgic touch to the dish.
We recommend a high-acidity wine like Sauvignon Blanc or a chilled Rosé to complement the tomato salad’s sweetness and acidity, we have various types of wine on the menu, all chilled and ready to enjoy.
